What does the Top Noodle Chef in the nation, the Best Peking Duck in Dallas, and Bill Clinton’s favorite noodle-maker have in common? A: They’re all from the Beijing Brothers restaurant.

Brothers Willy Lu and Yang Sun just opened their authentic Chinese restaurant stall, Beijing Brothers, in Plano's Legacy Food Hall this week, and you won’t find another pair of brothers more passionate about noodles.

Their family has been in the restaurant business for generations, and the two brothers are dedicated to earning the title of The Best Chinese Noodle in Dallas. Thanks to his training under Wang ShanMing, the #1 Noodle Master in Korea, Chef Willy has earned the title of one of the Top Noodle Chefs in America and can make up to 13 servings of noodles in one graceful noodle-stretching session. He has mastered the art of everything from extra thin “hair noodles” to classic Xiao Long Bao soup dumplings. He whipped up this beautiful off-menu dish of "Long Dragon Noodles" for me to show off his skinny noodle skills. Yang told me that this is a sign of respect because long noodles symbolize a long life in China.

Willy’s surreal noodle-making skills have brought him much success ever since he started cooking at age 12. However, he prefers to do things with his brother and social media whiz Yang by his side. Yang combines what he’s learned in the Master’s Computer Science program at UT Arlington with his passion for serving delicious and authentic Chinese food to the, “very, very nice,” Texans he’s met since they’ve moved to America.

Seven different restaurants across the nation have called on Willy and his special skills to develop the perfect noodle for their concept. He has sprinkled his magic over top locations in Beverly Hills, LA; South Beach, Miami; 5th Street, Manhattan; Long Island, NY and Aspen, CO. After tasting Willy’s noodles, THE Bill Clinton went back to the kitchen to pay his compliments to the chef.

Now, the two have settled into their Coppell, TX and Legacy Food Hall locations. Yang feels very proud of their active and successful social media pages, which he says is very unique for a Chinese restaurant in America. Willy extravagantly twirls the noodle dough in front of guests while Yang snaps pictures. They love where they’ve ended up, and they enjoy giving back to the community by putting on local noodle shows for kids and the Farmers Branch Senior Center.

They’re really nice guys, too, until you challenge their status of the best noodle-makers in the nation. The Beijing Brothers challenge anyone who thinks they can make more than Willy’s crazy 13 noodle servings at once to, “Come and show us. We’ll take you any time.”
